Simple Veggie and Rice Buddha Bowl 🥗


The Simple Veggie and Rice Buddha Bowl 🥗 is an easy and budget-friendly option that’s perfect for those days when you want a light but filling meal. With basic ingredients like rice, veggies, and a tangy dressing, this Buddha bowl is satisfying without costing much. Plus, it’s incredibly customizable to suit whatever ingredients you have on hand.

Simple Veggie and Rice Buddha Bowl 🥗 Sassy Mom Kitchen



This recipe is great for meal prep and can be made ahead for easy lunches throughout the week.



➡ Ingredients:

1/2 cup cooked white or brown rice

1/2 cup steamed broccoli

1/2 cup cherry tomatoes, halved

1/2 avocado, sliced

1 tbsp olive oil

1 tbsp lemon juice

1 tsp sesame seeds

Salt and pepper to taste


➡ Instructions:

1. Steam the broccoli until tender (about 5-7 minutes).


2. In a bowl, layer the cooked rice, steamed broccoli, cherry tomatoes, and avocado slices.


3. Drizzle with olive oil and lemon juice, and sprinkle sesame seeds on top.


4. Season with salt and pepper.


5. Serve immediately or store for meal prep.
